Küchen intermezzo /kitchen intermezzo

Ich bastle und nähe ja nicht nur sondern ab und zu steh ich auch in der Küche.
Meistens, wenn ich Hunger habe. 
Ab und zu jedoch auch um Kekse zu backen oder Kuchen oder ähnliches.
Ich hatte ja irgendwann die *hüstel* total sinnvolle Idee, weniger Süßkram zu kaufen und dafür lieber selbst zu produzieren, so dass vor dem Genuss die Arbeit steht, und in der Hoffnung dass ich dann nicht ganz so viel Süßes futtere.
Doch ach...

Oce upon a time I had the *coughs* sensible idea to buy less seweets and manufacture them myself, instead. So that I'd need to work before I get a treat.
Hoping that I wouldn't eat that mich sweets then.
But ah....

Ein Resultat meiner Back-und Bastelaktionen ist allerdings das regelmäßige Liefern von Backwaren an Freunde.
Und gerade jetzt wo es ganz vorsichtig Richtung Weihnachten geht....
One result of my baking events is the scheduled delivery of baked goods to friends.
Especially now, with christmas aproaching.

Ich weiss gar nicht mehr genau wie man drauf kam. Im Gespräch mit Freunden über Königsberger Marzipan und die diversen Marzipan-Manufakturen und Geschmacksrichtungen...
Irgendwann fiel das Wort "Ich mach ja auch ab und zu Marzipan selber..."
Und es folgte die vorhersehbare Frage, "Eeecht? ist das denn genau so gut? Kann man das mal vergleichen????"
I can't really remember how the thing started. During conversation with friends about Koenigsberger Marzipan and other, different, manufactures and flavours....
At some point I mentioned "From time to time I make my own marzipan..."
What follows was the quite forseeable question "really???? is it as good? can we sample it?

Durchschaubar, aber ein netter Anstoß sich wirklich mal wieder in die Küche zu stellen und ein wenig Marzipan für den Hausgebrauch zu machen.
A bit transparent, but the push I needed to get into the kitchen and make a bit of marzipan.

Es gibt im Internet viele verschiedene Rezepte, die alle mehr oder weniger auf das Gleiche hinaus laufen:
1:1 Puderzucker und Mandeln
dazu Rosenwasser und bei Bedarf etwas Bittermandel Aroma.
Tere are a lot of different recipies online but it basically simmers down to 1:1 almonds and powdered sugar with some rose water and almond flavour added.

Ganz ehrlich?
Ich muss davon abraten.
1:1 wird viel zu süß.
Und das Rezept allgemein wird viel zu trocken und krümelig.
Honestly?
I wouldn't advise on it.
1:1 ist by far too sweet.
And the recipie will get rather dry and cumbly.

Ich hab mein Marzipan lieber etwas weicher, feuchter, und nicht ganz so süß!!!
Das genaue Rezept wird natürlich nicht verraten, besonders weil es keins gibt ;)
I prefer my marzipan to bwe a bit softer, with more moisture and not that sweet!!!
I won't, of course, not divulge the exact recipie, mostly because there is none.

Nach Augenmaß und eigenem Geschmack ist da die beste Vorgehensweise.
Measure by eye and your own taste that's the best way here.

Also so gehts:
Gehackte Mandeln in den Mixer (man kann auch gleich mit Mandelmehl anfangen aber irgendwie wirds mit gehackten Mandeln netter, find ich)
Fein häckseln, einen kleinen Schluck Rosenwasser dazu und etwas Puderzucker.
Das Ganze ist dann eher noch krümelig aber man kann schon mal probieren.
Let's get the party started:
Put chopped alomonds in your blender (you can use whole but I find it getsa a better texture with already chopped almonds).
Blend nicely and add a few drops of rose water and a bit of sugar.
The mass will still be crumbly but you can start the tasting now to get the taste right.

Rosenwasser ist im Geschmack und auch im Duft sehr intensiv, also Obacht!
Je nach anzurührender Menge und eigenem Geschmack kann man ein / zwei Tropfen Bittermandel Aroma hinzu fügen.
Ich finde das macht das fertige Produkt im Geschmack etwas runder.
Das Aroma macht es auch ein wenig feuchter, bzw. öliger.
Feuchtigkeit ist nun das nächste Thema.
Mixer wieder anwerfen und Flüssigkeit dazu.
Nicht viel und nach und nach, damit es nicht zu flüssig wird.
Rose water has a rather intense taste, so be careful!
Depending on the amount you're making and the taste you want the finished product to have you might want to add almond flavour.
In my opinion it makes the flavour of the finished product a bit fuller and rounder.
The flavour also adds moisture, or better oil.
Moisture is the next topic..
Start the blender and add liquids.
Not too much and drop by drop so it won't get too moist.

Flüssigkeit ist hier ein dehnbarer Begriff.
Wasser geht, und je nach Geschmack Kirschwasser, Orangenlikör, Rum....
Der Kreativität sind hier keine Grenzen gesetzt.
Liquid is a broad subject here. 
Water is okay and if you like it you may also add cherry or orange spirits or rum...
Creativity knows no borders.

Ich mische gerne Wasser und Orangenlikör für die Fruchtigkeit.
Aber auch hier wieder.... der eigene Geschmack zählt!
Das ganze sollte von der Feuchtigkeit / Dichte her so aussehen wie man Marzipan Rohmasse eben kennt.
I like to mix water with orange liqueur to give it a bit of a fruty quality.
But here again, your taste is the important thing!
The whole thing should have the moisture and density of the marzipan you buy at the shops.

Ein paar Stunden kühl lagern hilft!
Dadurch verbindet sich die Masse ein wenig und lässt sich hinterher besser weiter verarbeiten.
It helps to let it rest in the fridge for a while!
The cold helps the mass to get a better connection and density so you can form it easier.

Ich mach ja gern meine eigenen Mozartkugeln.

 Mozartkugeln sind nicht mal besonders schwer.
Beim Herstellen des Marzipans hab ich in einen Teil noch ein paar gehackte Pistazien eingearbeit, das sorgt für die tolle Farbe
Mozartkugeln aren't that difficult.
When manufacturing the marzipan I had taken a bit of the mass and added pistacios for the green colour. 

Ich arbeite gerne schichtweise.
Also, ein kleiner Kern aus Nougat
Dann ein Mantel aus Pistazien Marzipan, danach das klassische Marzipan und, nicht zu vergessen
eine Schutzschicht aus dunkler Schokolade.
I like to work in layers, meaning a core of nougat, a coat of pistacio marzipan and then the classic marzipan, not to forget the dark chocolate layer.
